Kairiche Panhe

Kairiche Panhe is a well-known summer cool drink recipe prepared in every household of Konkan region of Maharashtra. In summer season lots of raw mangoes are easily available in Konkan so we prepare Kairiche panhe. For preparing this cool drink, very less ingredients are required.

Preparation Time –  10 mins

Cook Time – 15 mins

Total Time –  25 mins

Ingredients:

  • 5-6 medium size (Raw Mangoes)
  • 2 big bowl Jaggery
  • 1 teaspoon Cumin Seeds
  • 2 inch Ginger
  • 6-7 Mint leaves for garnish
  • Black Salt / Kala namak to taste

Serves:  8 persons

Directions / Procedure:

  1. Wash the raw mangoes and peal the skin. Then boil the peeled mangoes in water for about 10 mins.
  1. Turn off the flame and cool down raw mangoes on room temperature.
  1. Now mash the boiled raw mangoes, remove the seed and take the pulp for preparation.
  1. In a blender or mixture jar take two cup raw mango pulp and add jaggery, cumin seeds, ginger and black salt to taste in it.
  1. Blend the mixture very well till it becomes smooth thick paste. Transfer this smooth paste in a bowl.
  1. Here is your Pulp of Kairi Panhe ready.
  1. While serving the Kairi panhe, take 3-4 teaspoon pulp of Kairi and add water and ice cube (optional). Stir the mixture very well.
  1. Garnish with mint leaves and serve this cool drink in summer.

Tips / suggestions:

  • Use sugar instead of jaggery or use both like half sugar and half jaggery
  • Adding mint leaves for garnishing is optional
  • If you like chat masala / cardamom powder then sprinkle on it
  • You can store it in refrigerator for 2-3 weeks
