Maharashtrian Green Leafy Besan Pithale

Besan Pithale is a very common recipe found in interiors of Maharashtra. You will get different varieties of Pithale in different part of Maharashtra. Some prepare it with just plain besan and some try to give a twist adding different vegetables. In this post, I will show you how to prepare the Green Leafy Besan Pithale in the way it is prepared in Konkan region of Maharashtra.

Preparation Time –  25 mins

Cook Time – 10 mins

Total Time – 35 mins

Ingredients:

  • 1 medium size finely chopped onion
  • 5/6 green chillies
  • 5/6 curry leaves (kadi patta)
  • 4 cloves garlic (optional)
  • 1 small bowl finely chopped fresh fenugreek leaves (methi)
  • 1 teaspoon turmeric powder
  • 1 teaspoon mustard seed
  • 2 pinch Asafoetida
  • 1 bowl basan / gram flour
  • 4 bowl water
  • Salt to taste
  • 3 tea spoon oil

Serves:  5 persons

Directions / Procedure :

  1. First prepare mixture of besan and water – 1 bowl besan, add 2 bowls water, mix it very well and make a smooth paste. Keep aside.
  2. Heat oil in deep pan or kadai, add mustard seeds, chopped chillies, curry leaves, asafoetida and onion, saute on medium flame till onion becomes slightly reddish.
  3. Add fenugreek (methi) and turmeric powder, mix it well and cover with lid. Cook it for 2 minutes.
  4. After 3 minutes open the lid and slowly pour the mixture of besan. If required add small amount of water and salt to taste, stir it well to avoid the lumps.
  5. Cook it for 5 minutes means it becomes thick. While cooking stirs it continuously on medium flame
  6. Garnish with coriander leaves and serve hot with any type of bhakari/ Chapati/ Pulka. It also goes well with plain rice.

Tips / Suggestions :

  • Add any green leafy vegetables like spinach leaves (palak), Dill leaves (shepu)
  • Without green leafy vegetable you can also make pithale.
  • Always serve it hot with any type of Bhakri/Chapati/Rice
  • Onion and Mirchi Thecha (green chilly chutney) are always serves with Pithale Bhakri
  • Pithale is always eaten hot. It became solidify when it goes cold. Again, heat it on medium flame and add some hot water and mix it well.

Ready to serve with your lunch or dinner.
