Banana Malpua

Banana Malpua is a sweet dish which is mostly prepared during any festive season in  Maharashtra. You’ll come across different versions of Malpua in other states of India. It’s an easy recipe and requires few ingredients that are easily available at home. I learnt this from my mother.  This can be quickly prepared in a very short time to be served as a dessert/ sweet dish.

Preparation Time –  25 mins

Cook Time – 30 mins

Total Time – 55 mins

Ingredients: 

  • 2 bowl Maida (all purpose flour)
  • 1 bowl sugar
  • 1 bowl milk
  • 2 ripe bananas – peeled and smash the bananas
  • 1 teaspoon Poppy seed (khaskhas)
  • 1 teaspoon fennel seeds – crushed this well / use powder
  • 1 teaspoon green cardamom powder
  • Liquid food colour – yellow
  • Oil or ghee for deep frying
  • Dry fruits like cashews, almonds, pistachios and condensed milk for garnishing

Serves: 5 persons

Directions / Procedure :

  1. Take maida, sugar, smashed bananas and milk in a large mixing bowl. Mix it very well and try to break all the lumps.
  2. Add poppy seed, cardamom powder, fennel seed (powder / crushed) and liquid food colour. If required, further add milk or water, again mix it well. Make sure that there are no lumps in batter. Cover it with lid and keep aside for 30 minutes.
  3. Before frying, first check the pouring consistency of the batter. It should be smooth thick batter pouring consistency. If required add more milk and whisk it well. To make a smooth batter of pouring consistency.
  4. Heat the oil or ghee in a deep-frying pan / kadai on medium flame gas.
  5. Pour the one full spoon batter into the hot oil or ghee, it automatically forms round shape, no need to spread it.
  6. When frying from down side, in between splash some oil over the top side. It cooks little bit from one side then flip the malpua and fry it from other side. Fry the malpua till it turns reddish golden brown from both sides.
  7. Remove the malpua from oil and keep it on perforated spoon and press gently through rice serving spoon and drain the excess oil.
  8. Garnish with blended dry fruits and condensed milk, serve it as a sweet dish.

Tips / suggestions:

  • Add more sugar to batter is up to you. However, it increases the sweetness of malpua
  • Instead of milk use water OR half milk and half water
  • For frying purpose use oil or ghee. Else use mixture of oil and ghee. (1 bowl oil and 2 /3 spoon ghee)
  • Always fry malpua on medium flame gas.

  4. Looks awesome and can be easily made. I am kind of scared of deep frying but this can be tried I guess. Instead of frying can we cook it in less oil? (Like pancake?)

      Welcome to my blog Shilpi.
      You can try cooking in less oil on medium flame with nonstick pan. And flip the Malpua 2-3 times.
      Make sure the batter thickness is less with pouring consistency. Then it will cook very well. Go for it
