Veg Pulav

Veg Pulav is a common dish of rice mixed with various vegetables. If you don’t feel like having a full meal of chappati/roti, sabzi, dal, rice then just go for Veg Pulav. This pulav goes well with dal fry, raita, achar (pickle) and fried papads. It’s a common menu item for any home celebrations or parties.

Cook Time – 20 mins

Total Time – 40 mins

Ingredients:

  • 2 bowl rice (optional – Biryani Rice/ Normal Rice)
  • 2 and ½ bowl water
  • 1 small bowl green Peas (fresh/frozen)
  • 2 finely chopped Onion
  • 2 finely chopped Tomato
  • 2 finely chopped Carrot
  • 5-6 finely chopped Beans
  • 1 finely chopped Potato – small thin pieces
  • 2 teaspoon Ginger-Garlic-Coriander leaves paste
  • 4-5 cloves  (laung)
  • 4-5 black pepper (kali miri)
  • 2 black cardamom
  • 3-4 – bay leaf   ( tamal patra /tej patta)         
  • 1-inch cinnamon stick (dalchini)
  • 1 Star Anise
  • 3-4 green cardamom (optional)
  • 3 -4 teaspoon Ghee / Oil
  • Salt to taste

Serves:  5-6 persons

Directions / Procedure :

  1. Wash the rice and drain the water completely. Keep aside for 30 minutes. If possible place the rice in a chalni (big strainer /sieve)
  2. Heat the ghee in the Kadai or pan on low flame gas & add potato pieces and saute for about 3-4 minutes means it cook well.
  3. Remove it from kadai and keep aside. Like this slightly fry the cashews, beans and carrot and keep aside.
  4. In the same kadai or pan, heat the oil on low flame gas, add above spices like cloves, black pepper, cinnamon, cardamom, star anise and tej patta and saute for 2 minutes.
  5. Add finely chopped onion, saute for 2-3 minutes till the onion becomes translucent and slightly reddish.
  6. Add finely chopped tomato, saute till the onion and tomato becomes soft and oil start separating from the onion and tomato mixture.
  7. Add ginger-garlic-coriander paste in it. Mix it well, saute the mixture for 2-3 minutes.
  8. Now add drained rice and Mix it well. Here add 2 and ½ bowl water. Add turmeric powder and stir it well.
  9. Cover with lid and cook the rice on medium flame gas for about 4-5 minutes.
  10. In between check the water is enough for cooking the rice or not. If required add few amounts of water.
  11. Then add boiled green peas, cashews , carrot, beans and potato. Stir it well. Add salt taste and cook the veggies and rice for 3- 4 minutes.
  12. Veg Pulav is ready now. Serve this hot Veg Pulav with any raita, dal fry, fried papads, achar.

Tips / suggestions:

  • Use any fragrant(aromatic) rice or long grain Basmati rice
  • Add vegetables as per your choice like potatoes, capsicum, cauliflower florets.
  • Add extra green chillies if you like spice
  • Adjust above spice ingredients as per your choice
  • While making veg pulav in pressure cooker, adjust the water in cooker for texturing rice purpose – softer texture of rice add more water (½ bowl water) and hard texture of rice do not add more water
