Khapar Poli

Khapar Poli is a breakfast dish made in every household of Konkan region of Maharashtra. If you like sweet poli, then try this Khapar Poli with ghee and sugar powder. It is just awesome 😊

Preparation Time – 20 mins

Cook Time – 10 mins

Total Time – 30 mins

Ingredients:

  • 2 Bowl Rice
  • 1 Bowl Urad dal
  • 1 Bowl Chana Dal (Split Chickpeas/ Split Bengal Grams)
  • 2 Teaspoon Methi (Fenugreek)
  • 2 teaspoon Turmeric powder
  • 1 Small bowl grated Coconut
  • 1 Small bowl Poha – Beaten rice/ Flattened rice
  • 1/2 Bowl Grated Jaggery
  • 1 Bowl Powder Sugar (optional)
  • ½ Bowl Ghee
  • Oil for greasing
  • Salt to taste

Serves:  8 persons

Directions / Procedure:

  1. Rinse rice and urad dal, chana dal and methi in water for 3-4 times, means until water gets clear. Soak all ingredients in a big pan for about 5–6 hours.
  1. After 5-6 hours, grind soaked ingredients in a mixer. Add water as required and make thick smooth batter.
  1. In a big deep pan, now mix the batter very well and cover it with lid. Keep the batter in a warm place for fermentation, it requires minimum 7-8 hours.
  1. After 7-8 hours batter become fermented, stir the batter well.
    Keep aside for 15 minutes.
  1. Rinse the poha 2-3 times in water till they become clean and soft. Keep it in water for about 2-3 minutes and then remove it from water. Press the poha slightly using hand fingers and remove the excess water. Keep it aside.
  1. Now grind both poha and grated coconut in a mixer. Make smooth paste.
  1. Add this paste and grated jaggery (optimal) and turmeric powder into the fermented batter. Add enough water and salt to taste. Again, stir the batter.
  1. While stirring the batter, make sure that batter should be thick and have pouring consistency is must.
  1. Heat the dosa pan or tawa on low flame. Grease the pan with few drops of oil by using potato.
  1. Take the batter in a serving spoon or ladle, pour one full ladle of batter in the centre of pan. Spread it equally in round shape.
  1. Now keep the flame medium and cook the base lightly reddish then flip Khapar Poli carefully.
  1. Once it cooked from both sides then remove it in a plate, like this you can make rest of the Khapar Polis.
  1. Spread little bit ghee and sprinkle sugar over it and serve this immediately.

Tips / suggestions:

  • If you plan Khapar Poli on next day morning, then you have make batter in previous night
  • If batter is unused then keep it in the fridge, within 2-3 days you can use it
  • Using ghee, sugar and jaggery is optional
  • You can serve it with coconut chutney also
